Welcome to episode 1 of my new Salad series where I show you that salads don’t need to be boring🥱🥗Today we’re starting with a classic, the BLT salad🥓🥬
Ingredients:
• 4 cups of lettuce (romaine or iceberg)
• 1 cup of cherry tomatoes, halved
• 1 avocado, diced
• 1/2 cup of bacon bites, or 6 slices of turkey bacon, cooked and crumbled
• 1/4 cup of red onion, chopped
• 1 cup of fresh mozzarella, cherry size
For the dressing:
• 1 1/3 cups of Greek yogurt ( 2 containers of 5.3oz )
• Juice of half a lemon
• 2 tbsp of fresh chives, chopped
• 1 tbsp of Italian herb blend
• 2 tbsp of olive oil
• Salt, pepper and garlic powder to taste
Instructions:
1. In a large bowl, combine the chopped lettuce, halved cherry tomatoes, chopped red onion, diced avocado, bacon bites and fresh mozzarella.
2. In a small bowl whisk together the Greek yogurt, lemon juice, chives, Italian herbs, salt, pepper, garlic powder and olive oil.
3. Drizzle the dressing over the salad and toss to combine. Garnish with more bacon bites and chopped chives enjoy!🌱
