Recipe: high protein cafe-inspired brunch 🍳

Going cafe hopping can be tough when you’re on a diet, so I made my own cafe-inspired brunch at home. ✨ (P.S. saved on my CDC vouchers too till my diet is over!)

Macros: 535 calories

43g P | 28f F | 26g C

Ingredients:

- 120g 0% fat Greek yogurt

- few sprigs of dill

- lemon juice

- chili powder (optional)

- salmon fillet

- rocket leaves or other salad veggies

- 1 egg

- wheat crackers (I used vitaweat, but you can also use bread or any other crackers)

Steps:

1. To make the base, mix yogurt, dill, chili powder and some lemon juice together. Set aside in the fridge to keep cool.

2. Season the salmon and pan fry it, then fry the egg as well. Poaching your egg also works!

3. Assemble your brunch with the salmon, egg, veggies and crackers on the base.

Using 0% fat Greek yogurt as a creamy base, mixed with fresh dill and a splash of lemon juice, not only adds flavor but also provides probiotics that are great for digestion, which supports my overall health. I recommend seasoning the salmon generously before pan-frying; the golden-brown crisp adds a wonderful texture contrast with the soft yogurt base. If you prefer, poaching the egg is an excellent alternative to frying, as it reduces added fats while maintaining protein quality. Incorporating salad leaves like rocket adds freshness and fiber, balancing the meal. For carb choices, I love using wheat crackers like Vitaweat because they add crunch without excess calories. Bread or other whole-grain crackers work well too, depending on your preference. This recipe is fantastic for anyone in Singapore or elsewhere seeking a high-protein breakfast or brunch with controlled calories. It's quick to prepare, budget-friendly, and fits perfectly into a balanced diet.

High Protein Creamy Tuscan Salmon
👍: I’ve tried other recipes omitting the tomato elements and found it to be quite jelak. This recipe cuts the grease and substitutes high-fat cream with soft cream cheese, reducing the fat content. I used cherry tomatoes instead of sun-dried tomatoes as they are more accessible. Recipe tweaked from
