Today I picked up some kale and a wild rice blend (family owned company), and I already had everything else, so voila, immunity soup. You can swap or add whatever veggies you have, like leeks, butternut squash, celery, etc.
Ingredients
olive oil
onions, carrots, and sweet potato - diced
turmeric, cayenne, and cumin - to taste
ginger & garlic, grated
.5 cup wild rice
.5 lentils (brown/green)
3-4 cups broth
14 oz coconut milk
1-2 cups kale
Directions
1. add oil to hot pan
2. saute onions, carrots, and sweet potato
3. brown spices
4. add broth and scrape up any browned bits, bring to boil then lower heat, and cook 45 mins
5. add coconut milk and kale, turn heat to medium, and cook 5-10 mins
6. squeeze fresh lemon juice on soup when serving
I added parsley and jalapenos when I added the kale. Spicy and warming.
