GLUTEN FREE BANANA CHOCOLATE CHIP MUFFINS 🍌🍫

RECIPE:

(12 muffins):

• 2 medium ripe bananas

• 2 large eggs

• 1½ cups gluten-free all purpose flour

• ½ cup maple syrup

• ¼ cup melted butter

• 1 tsp cinnamon

• 1½ tsp baking powder

• Hu dark chocolate chips

Instructions:

1. Preheat oven to 350°F.

2. Mash bananas in a bowl.

3. Whisk in eggs, sweetener, and melted butter.

4. Stir in gluten free flour, cinnamon, baking powder, and salt.

5. Divide batter into muffin cups (about ¾ full).

6. Bake 18 minutes, until a toothpick comes out clean.

7. Cool slightly and enjoy

When mixing the batter, gently fold the dark chocolate chips in last to ensure even distribution without overworking the batter. Additionally, substituting the melted butter with coconut oil has worked well for me to keep the muffins moist and add a subtle tropical flavor. I like to use a good quality gluten-free all-purpose flour blend that contains xanthan gum, as this helps hold the muffins together nicely and improve texture. From my experience, baking the muffins just until a toothpick comes out clean, around 18 minutes, is key to preventing dryness. Letting them cool slightly before enjoying brings out the flavors beautifully. These muffins are perfect for a quick breakfast on busy mornings or as a wholesome snack anytime.
