Delicious Roasted tomato and garlic soup🍅
If you love rich, comforting soups, roasting tomatoes and garlic before blending makes a substantial difference in flavor. Roasting caramelizes the natural sugars in the tomatoes and garlic, giving the soup a deep, slightly sweet and smoky taste that’s hard to achieve with raw ingredients. I usually start by washing about 14 Roman tomatoes and cutting them into quarters. I add a whole onion cut into quarters and three garlic bulbs sliced in half to a roasting pan. Don’t forget to toss in fresh herbs like thyme and bay leaves, which enhance the aroma and depth of flavor. Drizzle everything with olive oil and roast at 425°F for 25-30 minutes until the vegetables are tender and slightly charred on the edges. Once roasted, I blend all the ingredients, including squeezing roasted garlic cloves out of their skins for that sweet roasted garlic punch. Removing thyme leaves from stems before blending avoids any bitter notes. After blending, I transfer the mixture to a pot, add about one and a half cups of water, and bring it to a simmer. Seasoning is key; a pinch of salt and black pepper balances the natural sweetness perfectly. To finish, stirring in a cup of heavy whipping cream makes the soup luxuriously creamy without overpowering the roasted essence. This recipe serves 6-8 people and is perfect for chilly evenings or when you crave something warm and hearty. It’s also versatile—I sometimes add a splash of balsamic vinegar or a pinch of chili flakes for extra zing. Pair with crusty bread for a delightful meal that's both nutritious and satisfying. In my experience, homemade soups like this not only satisfy your taste buds but also bring a comforting, homemade feel that store-bought soups often lack. Plus, roasting brings out complexity in simple ingredients that can turn an ordinary dish into an extraordinary experience.
