Paneer Grilled Cheese + Tikka Masala Soup (makes 1-2 sandwiches)
Ingredients
• 2 slices bread (sub gluten free if desired), get 4 slices if you want less filling
• ½ cup grated paneer (I used Sach foods high protein turmeric & habanero paneer)
• ¼ cup shredded mozzarella (helps meltiness)
• 1 tbsp finely chopped onion
• 1 tbsp finely chopped cilantro
• 1–2 tsp finely chopped green chili (optional)
• ¼ tsp garam masala
• ¼ tsp red chili powder
• Salt to taste
• 1–2 tbsp butter or ghee
Instructions
1. In a bowl, mix together the grated paneer, mozzarella, onion, cilantro, green chili, garam masala, red chili powder, and salt.
2. Butter one side of each bread slice. Place one slice butter‑side down, add the filling, and top with the second slice (buttered side facing out).
3. Heat a skillet over medium heat.
4. Cook the sandwich for 3–4 minutes per side until golden brown and crispy.
5. Serve warm with tikka masala soup and DEVOUR!!!
