Italian Basil Chicken Cutlets with Tomato and Mozzarella Topping

Ingredients:

For the Chicken:

2 large chicken breasts, halved horizontally

½ cup all-purpose flour

1 tsp garlic powder

Salt and black pepper, to taste

2 tbsp olive oil

For the Topping:

1 cup cherry tomatoes, halved

4 oz fresh mozzarella, sliced or torn

2 tbsp fresh basil leaves, chopped

1 tbsp balsamic glaze (optional)

1 tsp olive oil

Salt and pepper, to taste

Directions:

Prepare the Chicken:

Lightly season flour with garlic powder, salt, and pepper. Dredge chicken cutlets in the flour mixture, shaking off excess.

Cook the Chicken:

Heat olive oil in a skillet over medium heat.

Cook chicken 4–5 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove and set aside.

Prepare the Topping:

In a small bowl, toss cherry tomatoes with olive oil, salt, and pepper.

Assemble & Melt:

Preheat oven broiler. Place cooked chicken on a baking sheet, top with tomatoes and mozzarella.

Broil 2–3 minutes until cheese melts and bubbles.

Finish & Serve:

Sprinkle with fresh basil and drizzle balsamic glaze if desired. Serve immediately.
