The BEST 1 POT PASTA HACK 10/10
THE BEST PASTA HACK! This was easily a 10/10 and one of the best pasta recipes I’ve ever made.
Full recipe:
Fettuccine pasta
1 ½ cup cherry tomatoes
2 tablespoons of tomato paste
3 handfuls of baby spinach
½ red onion diced
3 crushed garlic cloves
1 tbsp parsley
1 tbsp oregano
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp Trader Joe's 21 Seasoning Salute
Olive oil (I used the Pompeian Extra Virgin Olive Oil)
1 cup of heavy cream
2 cups Vegetable (or chicken) broth
Parmesan cheese to taste
Instructions:
1. In a large pan, layer the Fettuccine pasta, cherry tomatoes, spinach, onion, and garlic.
2. Add tomato paste, seasoning, cream, and vegetable broth. Drizzle with olive oil.
3. Cover and cook over medium heat for about 15 minutes, stirring a few times.
4. Add a bit more broth and heavy cream if it gets too dry.
5. When the pasta is creamy and tender, top with Parmesan cheese.
6. Serve hot and enjoy!
I enjoyed mine with a slice of bread :)
