Here’s what I typically use: 1 cup (2 sticks) unsalted butter, softened 3-4 cups powdered sugar, sifted 1-2 tablespoons milk or heavy cream 1 teaspoon vanilla extract Pinch of salt Gel food coloring in red, orange, yellow, green, blue, and purple (gel colors give the best vibrance without thinning the buttercream too much!) To get started with your rainbow buttercream, beat the softened butter in a stand mixer with the paddle attachment until it's light and fluffy, about 2-3 minutes. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until combined, then increasing to medium-high. Once all the sugar is in, add the vanilla extract, salt, and 1 tablespoon of milk or cream. Beat on high for another 3-5 minutes until the buttercream is super light, fluffy, and smooth. If it's too thick, add more milk/cream sparingly; if too thin, add a bit more sifted powdered sugar. Now for the fun part: coloring your rainbow frosting!
