If you're ready to dive into making your own, here's the 'recipe' I cobbled together, along with some tips I learned along the way. I was aiming for that perfect balance of sweet cake and tangy pineapple, and I think I got pretty close! What you'll need: 1 box yellow or white cake mix (plus ingredients listed on box: eggs, oil, water) - I used yellow for a richer color. 1 (8 oz) can crushed pineapple, drained very well (this is key!) 1/2 cup cream cheese frosting (store-bought or homemade, just a little bit to bind it) Melting chocolate or candy melts (yellow, white, or even green for a fun pineapple look!) Lollipop sticks Styrofoam block or cake pop stand for drying Optional: Sprinkles or desiccated coconut for decoration My step-by-step cakepop adventure: Bake the cake: First things first, bake your cake according to the box directions. Once it's done, let it cool completely. This is super important – warm cake crumbles are a mess! Crumble time: Once cooled, crumble the cake into a large bowl. I just used my hands, it's quite therapeutic! Make sure there are no big lumps left. Add pineapple & frosting: Now, here's where the pineapple magic happens! Add your well-drained crushed pineapple to the cake crumbs. Then, add about half of your cream cheese frosting. Start with less, you can always add more. The goal is a dough-like consistency that you can roll into balls. If it's too sticky, add a little more cake crumbs (if you have any leftover). If it's too dry, add a tiny bit more frosting. Roll into balls: Roll the mixture into small, bite-sized balls. Try to make them uniform so they cook evenly – well, so they set evenly, since they're already baked! Place them on a baking sheet lined with parchment paper. Chill, chill, chill: This is probably the most crucial step for dipping success! Pop your cake balls into the fridge for at least 30 minutes, or even the freezer for 15 minutes. They need to be firm. Prep for dipping: While they're chilling, melt your candy melts according to package directions. I usually do this in the microwave in 30-second intervals, stirring in between, until smooth. Dip sticks, then balls: Take a lollipop stick and dip just the tip into the melted candy. Insert this into a chilled cake ball, about halfway. This acts like glue! The main dip: Once all your sticks are in, carefully dip each cake pop into the melted candy, twisting gently to ensure full coverage. Let any excess drip off by tapping the stick gently against the side of the bowl. Decorate & set: Immediately after dipping, if you want sprinkles or coconut, add them! Then, stick the cake pop into your Styrofoam block to dry completely. This can take a while, so be patient. A few things I learned (my personal tips!): Drain that pineapple! Seriously, squeeze out as much liquid as you can. Too much moisture will make your cake pops gooey and hard to roll. Don't over-frost: It’s tempting to add a lot of frosting for flavor, but it can make the mixture too soft. Start small. Chilling is your friend: A properly chilled cake pop is much easier to dip without it falling apart or creating cracks in the coating.
