Jiffy Tamale Pie

Ingredients

* 8.5 ounce box Jiffy cornmeal muffin mix

* 1 large egg

* 1 small can green chilies (diced)

* 1 tablespoon butter divided

* 1 cup diced onion

* 1/2 cup green onions (chopped)

* 1/3 cup cilantros (chopped)

* 1/2 cup green bell pepper

* 1/2 cup red bell pepper

* 1 teaspoon cumin

* 1 teaspoon chili powder

* Salt and Black Pepper

* 3 garlic cloves minced

* 1 pound ground beef or ground Turkey

* 15 ounce can red enchilada sauce

Instructions

- Preheat the oven to 400ºF.

- For the cornbread layer, in a medium bowl, combine the Jiffy cornmeal muffin mix, egg. Mix until well combined.

- Pan spray your baking dish, Pour the corn bread mixture into the dish. Bake 20 minutes or until golden brown. 

- For the beef or ground turkey mixture, in a large skillet, add some oil over medium-high heat. Add the chopped onion, green bell pepper,red bell pepper and cook until softened, then add the diced green chilies and cilantros. Cook for 5 minutes..

- Add the ground beef or turkey to the skillet. Crumble and cook until no longer pink. Drain any excess fat or water. Season with fresh garlic, cumin, chili powder and seasoning salt or salt, black pepper. Cook for another minute.

- Pour half of the enchilada sauce into the ground meat or ground turkey mixture, combine well.

- Remove the cornbread from the oven. Poke holes all over the surface.

- Top with the beef or turkey mixture, spreading out evenly over the corn bread. Pour remaining enchilada sauce over the beef mixture and top with shredded cheese. 

- Cover with aluminum foil and bake for 20 minutes. Uncover and broil on high an additional 3-5 minutes. Remove from the oven and allow to cool for 10 minutes. 

- Garnish with green onions, olives, guacamole, pico de Gallo, sour cream, and salsa.

Note: Can use a taco seasoning to your beef or turkey instead of the spices for a short cut.
