INGREDIENTS
300 g cake flour
¾ tsp salt
2½ Tbsp granulated sugar
2½ Tbsp baking powder
2 large eggs, room temp
2 tsp pure vanilla extract (I always use vanilla bean paste!)
420 ml whole milk, rom temp
75 g sour cream
90 g unsalted butter, melted, and slightly cooled
INSTRUCTIONS
Whisk all dry ingredients in a large bowl. In a medium bowl whisk all wet ingredients then make a well in the dry ingredients and pour in. Mix until no pockets of flour remain. A few lumps are perfectly ok! Heat a griddle over medium heat, grease & measure 1/4 cup of batter for each pancake. Flip when golden.
I served these with a dust of powdered sugar, cinnamon whipped cream, mixed berries and maple syrup.
