Creamy Spinach Pork Chops

This recipe is very easy and it was my go to dish when I was learning flavors. Hope y’all enjoy the recipe!
Ingredients:
- [ ] 2 tbsp olive oil
- [ ] I pack of pork chops (usually a pack of 4 or 5)
- [ ] 2 tbsp salted butter
- [ ] Half an onion
- [ ] 1 tbsp minced garlic
- [ ] 2 cups chicken stock
- [ ] 1- 1 1/2 cups heavy whipping cream
- [ ] Seasonings (Salt, pepper, garlic powder)
- [ ] Grated Parmesan
- [ ] Half a bag of spinach (get fresh not frozen because it will alter the taste and texture)
- [ ] 1 block room temperature cream cheese (cubed)
Instructions:
- add oil to a pan and cook pork chops until almost fully cooked(not fully cooked because they will continue cooking in the sauce later)
- place pork chops on a plate with paper towels on it and set aside
- add butter to the same pan until melted; then add chopped onion until softened
- add garlic and give it a few stirs
- add chicken stock and heavy whipping cream until bubbly then add about half a cup of Parmesan and stir
- add cream cheese(chopped into cubes) and cook until melted
- add seasonings and gradually add spinach stirring in between to shrink the spinach down
- after all is combined, simmer for 5 minutes until thickened(if sauce is too thin, add more Parmesan until desired thickness)
- add pork chops back in and simmer for another 5 minutes
- serve over risotto or mashed potatoes and a vegetable of your choosing(broccoli in the picture)
