Chicken and dumplings is a classic comfort food dish that's perfect for chilly days or when you want a warm, hearty meal without spending too much time in the kitchen. What I especially like about this recipe is how it uses readily available ingredients like rotisserie chicken and refrigerated grands biscuits, which really cut down on prep time while keeping the dish rich and flavorful. The key to getting fluffy, tender dumplings is to cook the biscuit quarters gently in the broth without stirring too much, so they don’t break apart. Covering the pot during cooking helps the dumplings steam perfectly — this moist heat is what makes them soft but cooked through. I’ve tried variations using homemade biscuit dough as well, but the convenience of store-bought biscuits cannot be beaten when you’re short on time. To customize this recipe, consider adding sautéed onions, garlic, or fresh herbs like thyme or parsley to the chicken broth base before boiling. This adds extra depth of flavor and freshness. Also, if you prefer a thicker stew, you can add a slurry of flour and water before adding the biscuit dough. Another tip is to use homemade chicken stock if you have it — it elevates the taste and makes the dish even more satisfying. However, the canned cream of chicken soup helps create a creamy texture effortlessly, making this recipe both accessible and delicious for cooks of all skill levels. Overall, this homemade chicken and dumplings recipe is a crowd-pleaser and a comforting meal that brings both relief on busy days and nostalgia to the dinner table. Enjoy!
