Making daisy lemon tarts is a delightful way to celebrate spring with a fresh, bright dessert that’s both visually charming and delicious. I’ve found that using pre-made Pillsbury pie crusts really cuts down on prep time, making this an accessible treat even for those who aren’t confident bakers. One tip I discovered is to slightly chill the pie crust before using the flower cookie cutter. This helps the dough hold its shape better, so your daisy shapes look crisp after baking. Pressing the dough into the mini muffin tin with a shot glass is a clever trick—it creates a perfect tart shell with an even edge. Don’t forget to poke fork holes on the bottom of each tart shell; this prevents bubbles and ensures even baking, resulting in a golden-brown, crisp texture. For the lemon curd, Bonne Maman’s brand is a great choice as it offers a smooth and flavorful filling without extra prep. After baking and cooling the tart shells, sprinkling powdered sugar adds just the right touch of sweetness and a pretty finish that enhances the presentation. I’ve also experimented with adding a tiny bit of lemon zest on top of the lemon curd before serving, which gives an extra layer of fresh lemon flavor that’s delightful. These tarts pair wonderfully with afternoon tea or as a light dessert after dinner. Overall, these daisy lemon tarts are not only easy to make but bring a pop of springtime joy to any table. Give this recipe a try—you’ll impress guests with a beautiful, tasty treat that’s surprisingly simple to prepare.
