Creamy Tortellini Soup 😋
First time trying this soup and it’s a 10/10 for sure in my household. The pot didn’t last 24 hours lol. Definitely worth a try!! Feel free to swap the kale for spinach or add both! 💚
Ingredients
• 1 lb Italian sausage (mild or spicy)
• 1 tbsp olive oil (if needed)
• 1 small yellow onion, diced
• 3 cloves garlic, minced
• 1 tsp Italian seasoning
• ½ tsp crushed red pepper flakes (optional)
• 4 cups chicken broth
• 1 (14.5 oz) can crushed tomatoes
• 3 oz tomato paste
• 1 cup heavy cream
• 9 oz refrigerated cheese tortellini
• 2 cups fresh Kale (or Spinach) - or both
• Salt & pepper, to taste
• Freshly grated Parmesan, for topping
Instructions
1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Drain excess fat if needed.
2. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic, Italian seasoning, and red pepper flakes; cook 1 minute until fragrant.
3. Pour in chicken broth and crushed tomatoes and paste. Bring to a gentle simmer.
4. Stir in the tortellini and simmer 5–7 minutes, or until tender.
5. Lower heat and stir in heavy cream and spinach and or kale. Let the greens wilt and the soup thicken slightly, about 2–3 minutes. Season to taste with salt and pepper.
6. Ladle into bowls and top with Parmesan cheese.
