🥣 Bowl 1: Chicken Veggie Protein Bowl

(Chicken + Chickpeas + Black Beans)

Ingredients

• 1 cup cooked white rice

• ½ cup cooked chicken breast, diced & seasoned

• ½ cup roasted chickpeas

• ½ cup black beans (rinsed & drained)

• ½ cup corn (roasted or steamed)

• 2 tbsp crumbled feta (or dairy-free alternative)

• Fresh parsley or cilantro

Creamy Sauce

• ¼ cup Greek yogurt (or plant-based yogurt)

• 1 tbsp olive oil

• 1 tbsp lemon juice

• 1 tsp garlic powder

• 1 tsp paprika

• Salt & pepper to taste

Instructions

1. Cook rice and season lightly with salt.

2. Season chicken with paprika, garlic powder, salt & pepper.

Sauté or air-fry until golden and fully cooked.

3. Roast chickpeas at 400°F for 20–25 minutes with olive oil and spices.

4. Warm black beans and corn.

5. Whisk all sauce ingredients until smooth.

6. Assemble bowl:

Rice → chicken → chickpeas → black beans → corn

7. Drizzle sauce and finish with feta + herbs.

(Vegetarian / Plant-Based)

Ingredients

• 1 cup cooked white rice

• ½ block extra-firm tofu, pressed & cubed

• ½ cup shelled edamame

• ½ cup corn

• 2 tbsp crumbled feta or vegan feta

• Fresh parsley or green onion

Tofu Marinade

• 1 tbsp soy sauce or tamari

• 1 tbsp olive oil

• 1 tsp garlic powder

• 1 tsp smoked paprika

Creamy Sauce

(Same sauce as Bowl 1 for consistency)

• ¼ cup Greek or plant-based yogurt

• 1 tbsp olive oil

• 1 tbsp lemon juice

• Salt & pepper
