🛒 INGREDIENTS (serves 3-4)

• 2-3 russet potatoes, diced into ½-inch cubes

• 1 medium yellow onion, diced

• 4-5 large eggs, beaten

• 4 oz cheddar cheese, shredded

• 2-3 tablespoons cooking oil or butter

• Salt and pepper to taste

• Optional: garlic powder or paprika,

chili powder and Italian Seasoning

👨‍🍳 INSTRUCTIONS

1. Heat oil in a large skillet over medium-high heat.

2. Add diced potatoes. Season with salt, pepper, and garlic powder or paprika, chili powder, Italian seasoning Cook 8-10 minutes, stirring occasionally, until golden and crispy.

3. Add diced onion. Cook 3-4 minutes until soft.

4. Reduce heat to medium. Push potatoes and onion to one side of the skillet.

5. Pour beaten eggs into the empty side. Let set 30 seconds, then gently scramble until just cooked through.

6. Fold everything together so the eggs mix into the potatoes and onions.

7. Sprinkle cheddar over the top. Cover with a lid for 1-2 minutes until melted.

8. Serve hot, straight from the skillet.

• Small potato cubes cook faster and crisp better than large ones.

• Don’t stir the potatoes too often — let them sit so they brown properly.
