Traditional bread is a strict no-go on keto, but who says you can't have a delightful and filling 'sandwich'? I discovered that using certain vegetables or low-carb alternatives makes all the difference. While lettuce wraps are great, my absolute go-to for that true 'sandwich' feel is a vibrant yellow bell pepper. It’s crunchy, refreshing, and robust enough to hold all my favorite fillings together beautifully. Sometimes I'll opt for large romaine lettuce leaves or even a low-carb cheese wrap, but the bell pepper truly mimics the satisfying bite of a sandwich. My go-to "Yellow Wrap" Keto Sandwich is incredibly simple to assemble, inspired by the colorful ingredients I often see. Here’s how I make it: What You'll Need: 1 large yellow bell pepper (the bigger, the better!) Your favorite creamy filling (I usually go for a mix of cream cheese and herbs, or a zesty avocado mash. Tuna salad or chicken salad made with keto-friendly mayo also works wonders!) A handful of sliced green bell peppers (for extra crunch and that lovely color contrast) Optional additions: Sliced deli meat (turkey, ham, roast beef), a slice of your favorite keto cheese, spinach, a thin slice of tomato, or even some crispy bacon bits. How I Put It Together: First, I wash the yellow bell pepper thoroughly. Then, I carefully halve it lengthwise and gently scoop out all the seeds and any white membranes.
