... Read moreHey fellow aspiring bakers! So, you're ready to dive into the wonderful world of sourdough? Getting your starter going is probably the most exciting (and sometimes nerve-wracking!) part. I'm sharing my Day 1 experience to help you kickstart yours! For Day 1, the instructions are surprisingly simple, but crucial for setting the stage. You'll need just two ingredients: 1 cup of bread flour and 1 cup of filtered water. Why bread flour? It has a higher protein content, which is fantastic for developing gluten and providing plenty of 'food' for the wild yeasts and bacteria we're trying to cultivate. And filtered water is essential because chlorine in tap water can inhibit these beneficial microorganisms, so it's best to avoid it if you can. Once you have your ingredients, you simply mix them together in a jar or container. Stir it well until you achieve a thick pancake consistency. It shouldn't be too runny, nor too stiff. Think of a thick batter that slowly drips off your spoon. This consistency allows for good aeration and hydration, which are both vital for yeast activity. After mixing, don't seal it tightly! You'll want to cover it in a paper towel or a loose-fitting lid. This allows air to circulate, which is important for the aerobic bacteria, while still protecting your starter from dust and unwanted contaminants. Secure the paper towel with a rubber band. Now for the waiting game! Place your covered jar in a warm environment. This doesn't mean scorching hot, but a consistent temperature between 75-80°F (24-27°C) is ideal. I found a cozy spot on top of my fridge, but you could also try an oven with just the light on, or a warm corner of your kitchen. The warmth encourages the yeasts and bacteria to wake up and start feasting on the flour. What to expect on Day 1? Honestly, probably not much! Don't be disheartened if you don't see any bubbles or activity. This is completely normal. Day 1 is all about getting those initial microbes introduced and giving them a comfortable home. It's a waiting game, but a very rewarding one. Just trust the process, and get ready for Day 2! I can't wait to see what 'Miss Lady' (as I've affectionately named my starter) does next!
