Orange Mini Chip Muffins 🍊🍫
These muffins are better than in the bakery, because these muffins are infused with citrus flavor in it and chocolate chips complete the final taste. They are super moist, soft, fluffy, citrusy, and so delicious.
🔘Ingredients:
2 large eggs ( room temp)
1 cup (213g) granulated sugar
1/2 cup(125g) sour cream (room temp)
1/3 cup(80ml) heavy whipping cream (room temp)
2 cups(350g) chocolate chips (mini)
2 cups (260g) all purpose flour
5 tbsp (76g) unsalted butter
3 tbsp (45ml) oil
1/2 tsp salt
1 tbsp orange zest
1/4 cup orange juice
1 tsp baking powder
1/4 tsp baking soda
1 tsp vanilla extract
🔘Prep and Baking Process:
Preheat oven to 425F/220C degrees.
Place muffin cups in the muffin tin and set aside.
Add flour, baking powder, baking soda and salt into a bowl and set aside.
In the medium bowl mix sugar and orange zest until sugar will become orangish color.
Add butter into a mixture and beat for 3-5 minutes until butter becomes fluffy.
Add eggs and whisk together until smooth.
Add oil, orange juice, sour cream, heavy whipping cream and vanilla extract, mix until well combined.
Then, add the flour mixture and mix until incorporated (don’t over-mix the muffin batter).
Fold in the chocolate chips (mini) in the batter.
Let the batter rest in the fridge for 30 minutes.
Scoop the muffin mixture into a muffin liner and fill them a little more than a half. Sprinkle on the top of muffins with a little more chocolate chips.
Sent them to oven and bake them for the first 8 min at 425 F and remaining 25 min at 355F. (Note: everyone’s oven is different, watch accordingly).
Check with toothpick for readiness of the muffins by inserting toothpick into the center and it should come out clean.
Serve with coffee, tea or any other drink.
