Looking for a low-effort, high-protein weeknight dinner that the whole family will love? 🙋♀️ This one-pot oven-baked chicken wings and rice dish is pure comfort food. The wings get crispy on top while the rice and lentils become tender and flavorful underneath. It’s a nutrient-packed meal with minimal cleanup!
What you will need:
Wings: 2 lbs chicken wings (patted dry)
Rice: 1.5 cups white rice (long grain), rinsed well
Lentils: 3/4 cup brown or green lentils (pre-soaked for 20 mins to ensure even cooking)
Liquids: 3.5 cups chicken brothFlavor Boosters:1 diced onion, 3 minced garlic cloves
Seasoning: 1 tbsp garlic powder, 1 tbsp paprika, 1 tsp cumin, salt & black pepper2 tbsp Olive oil
Optional: Fresh parsley and lemon wedges for serving
Directions:
Prep & Season: Preheat oven to 400°F (200°C). Pat chicken wings very dry (this is the secret to crispy skin!). In a bowl, toss wings with oil, salt, pepper, paprika, and garlic powder.
Sauté Aromatics: In a large oven-safe dish (like a Dutch oven or a deep metal baking pan), heat a little oil on the stove. Sauté onions until soft, add minced garlic, then toast the rinsed rice for 1-2 minutes.
Assemble: Stir in the lentils and chicken broth. Nestle the seasoned chicken wings on top of the rice mixture (skin-side up).
Bake: Cover the dish tightly with a lid or foil. Bake for 30-35 minutes.
Crisp It Up: Remove the foil/lid. Bake for another 15-20 minutes, or until the wings are golden brown and the liquid is absorbed.
Serve: Garnish with fresh parsley and a squeeze of fresh lemon juice for brightness.
