Hey everyone! It’s been quite a journey since I shared about my diet transition. As you know, I was pescatarian for nine years, and even though I've reintroduced red meat, there are days I still *crave just fish*! Especially now, living with my grandparents, I've had to get creative in the kitchen to make sure everyone's happy. They have their preferences, and I still adore my seafood! One of the biggest challenges when cooking for a multi-generational household, especially with grandparents, is finding meals that are both healthy, delicious, and easy to digest for everyone. That's why I often lean into my pescatarian roots. Fish is fantastic because it's usually light, packed with good nutrients, and can be incredibly versatile. And let's be honest, sometimes those weird cravings just hit, and only a perfectly cooked piece of fish will do! So, if you’re also wondering about "pescatarian recipes for grandparents," I've got a few go-to ideas that have become staples in our home. They're simple, delicious, and grandparent-approved! First up, baked salmon with roasted veggies. This is a winner because it's so hands-off. I usually marinate salmon fillets in a little lemon juice, garlic, dill, and olive oil. Then, I chop up some broccoli, bell peppers, and sweet potatoes, toss them with the same seasoning, and spread everything on a baking sheet. Pop it in the oven for about 20-25 minutes, and voilà! It's a complete meal, healthy, and the flavors are mild enough for even the pickiest eaters. Plus, baking keeps the fish tender and flaky, which is great for older family members. Another favorite, especially when I craue just fish and something a bit more comforting, is a simple pan-fried white fish. I often fry fish like cod or tilapia with a light, crispy breading made from seasoned flour or panko crumbs. The trick is not to overcook it! A quick pan-fry gives it that lovely golden crust. I serve this with a side of steamed green beans and some mashed potatoes. It’s classic comfort food that feels special but takes no time at all. My grandparents always appreciate a well-fried fish, and the crispy texture is just divine. Sometimes, if I'm feeling a bit more adventurous, I'll make fish tacos. This is fantastic for a family dinner because everyone can customize their own. I use flaky white fish, either baked or lightly pan-fried, seasoned with a bit of cumin and chili powder. Then I set out warm tortillas, shredded cabbage, a simple yogurt-lime sauce, and some salsa. It’s interactive, fun, and a great way to get different textures and flavors in one meal. It’s also surprisingly light! For a quick lunch, especially when I'm busy with the baby, tuna salad sandwiches (using canned tuna in water, of course!) are a lifesaver. I mix tuna with a little Greek yogurt instead of mayo for a healthier twist, add chopped celery, red onion, and a squeeze of lemon. Serve on whole-wheat bread or with crackers. It's a protein-packed meal that's easy to chew and digest. Cooking for my grandparents has taught me so much about adapting meals and finding joy in shared mealtimes. Even with my baby girl starting cereal soon, I know these pescatarian-friendly meals will continue to be a big part of our family's menu.
