apple pie muffins: easy fall dessert
i just made these for my friends this weekend so i thought i’d share the recipe! these can also be made into a cake, but i prefer muffins for easier grab and go.
INGREDIENTS
4 cups roughly chopped apples
2 cups sugar
2 eggs beaten lightly
2 tsp vanilla
1/2 cup vegetable oil
2 tsp baking soda
2 cups flour
2 tsp cinnamon
1 tsp salt
*nutmeg to garnish
preheat oven to 350 degrees. mix apples and sugar, let sit. mix dry ingredients, stirring in apple and sugar mixture. scoop into tray, bake until ready (20-30 for muffins, longer for cakes!)
