White Bean Chicken Chilli

The absolute best cozy white chilli ever!

Dice 1/2 yellow onion and 1 full bell pepper and saute with a tablespoon of Olive oil in a heavy bottom large pot until the vegetables are translucent. Add two boneless/skinless chicken breast, 32 oz of chicken broth, salt, pepper, smoked paprika, onion powder, garlic powder, coriander, cumin, 4 pealed cloves of garlic (I don’t typically measure the seasonings; I let love and experience guide the way but let’s say 1-2 teaspoon of each.) bring to a rapid boil and then simmer on low for 1. Hr. Add in two cans of white beans, a can of corn, 1 cup of heavy cream. Let cook on medium low for another 30 mins.
