🍖 Gochu Knees Weak Pork Belly Bites
A super easy recipe that’s perfect for game day, backyard hangs, or when you just feel like crushing 5 lbs of pork belly all to yourself (we don’t judge).

Ingredients
• 1 skinless slab of pork belly (about 5 lbs)
• 2–3 tbsp maple syrup (plus more for finishing)
• 2–3 tbsp sesame oil (plus more for braising)
• 2–3 tbsp brown sugar (plus more for braising)
• Uncle Hemmy’s Gochu Knees Weak seasoning (liberal amount)

Method
1. Prep the smoker
• Fire up your smoker to 250°F.
2. Cube the pork belly
• Cut into ~1-inch cubes.
3. Binder + seasoning
• In a large bowl, coat pork belly cubes with 1 tbsp each of maple syrup and sesame oil (scale up depending on size of slab).
• Season all sides generously with Gochu Knees Weak.
• Let sit for 20 minutes or cover and refrigerate overnight.
4. Smoke – Part 1
• Place cubes on a wire rack set over a pan, spaced evenly.
• Smoke for 2.5–3 hours.
5. Smoke – Part 2 (Braising)
• Transfer cubes into a deep foil pan.
• Add a drizzle of sesame oil, another splash of maple syrup, and sprinkle 2–3 tbsp brown sugar.
• Cover with foil and return to smoker for 1 hour.
• Remove the cover and continue to cook uncovered for another 30–60 minutes, flipping halfway through.
• Cook to an internal temp of 190–200°F.
6. Finish + Serve
• Remove pork belly from braising fluid.
• Place in a large bowl, toss with a little more maple syrup and a final dusting of Gochu Knees Weak.
• Serve hot and watch them disappear!
