Sweet Potato Bread

Ingredients:

- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)🍠

- 1/2 cup salted butter, softened 🧈

- 1 cup brown sugar

- 1/2 cup granulated sugar

- 3 large eggs 🥚

- 2 tsp vanilla extract (I use homemade vanilla extract)

- 2 cups all purpose flour

- 1 tsp baking powder

- 1 tsp baking soda

- 1 tsp ground cinnamon

- 1 tsp ground nutmeg

- 1/2 cup sliced almonds (optional)

Directions:

1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.

2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the mashed sweet potatoes, eggs, and vanilla extract to the mixture, and mix until well combined.

4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.

6. Pour the batter into the prepared loaf pan and smooth the top.

7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
