WHAT I EAT IN A DAY: High Protein, Low Carbs 🌸🍽️

i’m currently two weeks postpartum since having my second child. (I’m in love with his whole life btw 😊) Toward the end of my pregnancy, I was told diagnosed with gestational diabetes so these are the type of meals/snacks I ate then and I’m still currently eating now. Since having my baby and staying consistent with this type of diet, I’ve lost a total of 25 pounds and have been able to avoid having to take insulin injections.
- Premier Protein (Costco or Walmart) - I recently began drinking Premier protein shakes every morning over this past week & I love the chocolate one! They’re 30g of protein and only 5g carbs! I tried the vanilla and caramel ones as well, but chocolate is my favorite. I drink this first thing in the morning and I’ve noticed it helps me become more regular💩 & and also keeps me full for a while.
- Chobani (Costco) - I purchased a 16 pack of these yogurts from Costco & each one has 20g of protein and 8g carbs. They come with four different flavors: Cherry, mango, raspberry & lemon, and vanilla. (raspberry, lemon being my favorite)
- Protein peanut butter granola (Trader Joes) - I add either 1/2 or 1/4 of this granola to my yogurt for a little protein, flavor, and crunch.
- Tuna Salad w/ lettuce & saltines (Costco) - tuna salad has become my best friend during this journey because it virtually has little to no carbs. Tuna, eggs, mayonnaise, mustard, and lettuce each have less than 1g of carbs (Tuna has 43g of protein). The carbs mostly come from the relish, onions, and crackers, which still don’t end up being much. The lettuce is a great substitute for crackers because it adds a level of freshness and crunch, but I’m still gonna have me a serving or two of crackers 🤫😄
- Busseto Salami & Provolone (Costco) - i’ve recently incorporated these little snacks into my diet because they’re high in protein and they’re great for when you just need a little something in between meals. If you like salami and provolone, this snack is perfect for you!
- Grass Fed Beef Sirloin, 2 Fried eggs, & Asparagus (Costco) I ended up cooking the beef sirloin and asparagus then meal prepping. I would add a different side to this meal so that I wouldn’t get bored of the same exact thing each time. If I didn’t pair it with the two fried eggs, I’d pair it with rice. You could also potentially pair it with a mashed potato, quinoa, mac & cheese, or anything of your choosing. And I must say I’ll be buying this beef sirloin again.. I loved it!
- Zero Sugar Minute Made Fruit Punch - I swear by this juice! I’ve been a huge juice drinker my entire life hence how I probably ended up with gestational diabetes 🤦🏾♀️ however this juice only has 1 carb, 5 calories, and 0 sugar. I wish I would’ve known about it sooner because it’s very tasty and a much better option than regular juice. I recently bought their pink lemonade version, so I’ll be giving that a try as well and updating guys on how I like it! 😄
