Buttermilk Hot Honey Chicken Sandwich w/ Peppercor
This is the best chicken sandwich I’ve ever made!! It’s juicy and crispy! Sweet and spicy with that amazing peppercorn ranch!! Definitely running this back again!
🍗 Marinade
* 2 chicken breasts or thighs
* 3/4 cup buttermilk
* 1/4 cup pickle juice
* 1–2 tbsp hot sauce
* 1 tsp salt
* 1 tsp pepper
* 1 tsp garlic powder
* 1 tsp paprika
👉 Let sit at least 4 hours or overnight
🧂 Breading
* 1 1/2 cups flour
* 1/2 cup cornstarch
* Seasonings (same as before)
👉 Optional: add a splash of that marinade into the flour for those crispy craggly bits 👀
🍯 Hot Honey:
* 1/2 cup honey
* 1–2 tbsp hot sauce
* 1 tbsp butter
* Red pepper flakes
🍳 Fry the chicken:
* Heat oil to 350°F
* Take chicken from marinade → into flour
* Press coating in GOOD
👉 For extra crispy:
* Do double dredge (flour → marinade → flour again)
* Fry 6–8 minutes until:
* deep golden
* internal temp 165°F
* Remove → rest on rack (not paper towel)
🥪 Assemble:
* Toast brioche buns in butter 😮🔥
* Bottom bun → peppercorn ranch
* Add lettuce or slaw
* Add chicken
* Drizzle hot honey
* Add pickles
* Top bun
