Buttermilk Hot Honey Chicken Sandwich w/ Peppercor

This is the best chicken sandwich I’ve ever made!! It’s juicy and crispy! Sweet and spicy with that amazing peppercorn ranch!! Definitely running this back again!

🍗 Marinade

* 2 chicken breasts or thighs

* 3/4 cup buttermilk

* 1/4 cup pickle juice

* 1–2 tbsp hot sauce

* 1 tsp salt

* 1 tsp pepper

* 1 tsp garlic powder

* 1 tsp paprika

👉 Let sit at least 4 hours or overnight

🧂 Breading

* 1 1/2 cups flour

* 1/2 cup cornstarch

* Seasonings (same as before)

👉 Optional: add a splash of that marinade into the flour for those crispy craggly bits 👀

🍯 Hot Honey:

* 1/2 cup honey

* 1–2 tbsp hot sauce

* 1 tbsp butter

* Red pepper flakes

🍳 Fry the chicken:

* Heat oil to 350°F

* Take chicken from marinade → into flour

* Press coating in GOOD

👉 For extra crispy:

* Do double dredge (flour → marinade → flour again)

* Fry 6–8 minutes until:

* deep golden

* internal temp 165°F

* Remove → rest on rack (not paper towel)

🥪 Assemble:

* Toast brioche buns in butter 😮‍🔥

* Bottom bun → peppercorn ranch

* Add lettuce or slaw

* Add chicken

* Drizzle hot honey

* Add pickles

* Top bun

One cooking tip that worked well for me is letting the chicken marinate overnight rather than just four hours. This extended marination extra tenderizes the meat and deepens the flavor. When breading the chicken, adding a splash of the marinade to the flour mix helped create those deliciously crispy craggly bits everyone loves on fried chicken. For an even crispier crust, I followed the double dredge method: coating the chicken with flour, dipping it back into the marinade, and then flouring it again before frying. Frying at 350°F ensured a perfect golden crust without overcooking. The hot honey glaze, made with honey, butter, hot sauce, and red pepper flakes, adds a wonderful sweet-spicy glaze that complements the crispy chicken perfectly.
