Making enchiladas it’s my least favorite things to do but they are definitely one my favorite to eat. I only know how to make the red ones but I wanna try to make the green ones.

Enchiladas rojas are a traditional Mexican dish made with corn tortillas filled with meat, cheese, or beans, and covered in a rich red chili sauce. The key to delicious enchiladas rojas is preparing the sauce with fresh dried red chilies such as guajillo or ancho, blended smoothly to bring out deep smoky and slightly sweet flavors. Many home cooks use a nutribullet or blender with a MAX-8 cup capacity to help create a consistent sauce texture. When making these, it’s common to pan-fry the tortillas briefly before filling them to prevent sogginess. While making enchiladas can seem labor-intensive, especially if preparing from scratch, the taste payoff is rewarding. Red sauces differ from green sauces primarily by their chili base, with green enchiladas typically featuring tomatillos and green chilies. If you’re interested in venturing beyond red enchiladas, the green variety offers a tangier and fresher flavor profile. Many passionate home cooks start with enchiladas rojas and gradually try green enchiladas as they get more comfortable with the techniques involved. For those who prefer a quicker preparation, using store-bought red enchilada sauce is an option, but homemade sauce is usually preferred for authenticity and superior taste. This dish pairs excellently with simple sides like Mexican rice, refried beans, and fresh garnishes including crema, chopped onions, and cilantro. Don’t be discouraged if enchiladas are not your favorite to prepare; many find the rewarding taste and sharing the meal with family or friends makes the effort worthwhile. Experimenting with different chili blends or fillings can also keep the cooking process engaging and enjoyable.
