Beef Stew Meal Prep
1. Start by chopping the “holy trinity” of vegetables: carrots, celery, and onions.
2. In a slow cooker, sauté the onions and garlic in olive oil until softened and fragrant.
3. Add the rest of the chopped vegetables and cook them down slightly to enhance their flavor.
4. Pour in beef broth to create a rich base for the stew.
5. Use well-marbled beef chunks for tenderness and flavor. Season them generously before adding them to the pot.
6. Stir everything together, then pour in a good splash of red wine (like Pinot Noir) to deepen the flavor.
7. Add beef bouillon and your choice of final seasonings, such as thyme, garlic, salt, pepper, or other herbs.
8. Cover the pot and set the slow cooker to the pressure cook option. Cook for 2–6 hours, depending on how tender you want the beef and how much time you have.
9. Once done, portion out the stew into containers with white rice for a ready-to-go meal throughout the week.
