Roasted Turmeric Cauliflower with Herb Dressing

Ingredients:

For the Roasted Cauliflower:

* 1 cauliflower head

* 1 tsp turmeric

* 1/2 tsp salt

* 1/4 tsp black pepper

* 2 tbsp olive oil

* 1 tsp smoked paprika

* 1 tsp garlic powder

* 1 tsp curry powder

* 1/2 tsp cumin

For the Herb Dressing:

* 1/4 cup fresh basil leaves

* 4-5 sage leaves

* 1/4 cup fresh parsley leaves

* 1/4 cup fresh oregano leaves

* 2 cloves garlic

* 1/4 cup olive oil

* 1/2 tsp Tajin seasoning (or chili powder)

* 1 tbsp nutritional yeast

* 1/2 tsp ground coriander

* Juice of 1/2 lemon

For the Garlic Yogurt Dressing:

* 1 cup plain Greek yogurt

* 1/2 tsp turmeric

* Zest of 1 lemon

Instructions:

1. Preheat your oven to 400°F.

2. Prepare the cauliflower by removing the outer leaves and cutting it into florets.

3. In a large bowl, mix together turmeric, salt, black pepper, olive oil, smoked paprika, garlic powder, curry powder, and cumin.

4. Add the cauliflower florets to the bowl and toss them until they are evenly coated with the marinade.

5. Spread the cauliflower onto a baking sheet in a single layer.

6. Roast the cauliflower in the preheated oven for about 40 minutes, or until it is tender and slightly golden, tossing halfway through.

7. While the cauliflower is roasting, prepare the herb dressing by blending basil, sage, parsley, oregano, garlic, olive oil, Tajin seasoning, nutritional yeast, ground coriander, and lemon juice in a food processor until it forms a thick dressing. Set it aside.

8. In a small bowl, mix together plain Greek yogurt, turmeric, and lemon zest to make the garlic yogurt dressing. Set it aside.

9. Heat 2 tablespoons of olive oil in skillet a over medium heat Add the. pine nuts and fry them for about 4 minutes, or until they turn golden brown. Remove from heat and set aside.

10. To assemble the dish, spread the garlic yogurt dressing on serving plates. Place the roasted cauliflower on top of the dressing.

11. Drizzle the herb dressing over the cauliflower.

12. Sprinkle the roasted pine nuts over the cauliflower and dressing.

13. Serve the roasted turmeric cauliflower immediately and enjoy the flavors and textures.
