Ingredients
For the chicken:
• 1 lb boneless chicken breast
• Salt to taste
• 1 tsp smoked paprika powder
• 1 tsp black pepper powder
• 1 tbsp garlic powder
• 1 tsp onion powder
• 2 tbsp oil + more for cooking
For the filling:
• ½ red /white onion, diced
• ⅓ cup cabbage, diced
• ½ cup cliantro, sliced
• ¾ cup mayonnaise
• ⅓ cup sour cream
• 1 tbsp Dijon mustard optional
• 1 tbsp garlic powder
• 1 tsp black pepper
• 1 tsp bird eye chilli sauce
• Salt to taste
For assembly:
Sourdough bread

Method:
1. Prepare the chicken: In a bowl, add chicken, salt, pepper, garlic powder, smoked paprika powder, and onion powder. Drizzle oil on top and mix until nicely coated.
2. Cook the chicken: In a pan, add oil and cook the chicken for 12–15 minutes or until fully cooked and spreadable. Shred the chicken.
3. Prepare the filling: In a bowl, combine shredded chicken, cabbage, cliantro, red onion, mayonnaise, sour cream, Dijon mustard, garlic powder, black pepper, hot sauce, and salt. Mix well until combined.
4. Assemble: Place a layer of leafy greens & chicken mixture on a slice of bread, finally followed by another bread.
5. In a pan add some butter. Toast the sandwich on medium-low heat for 3–4 minutes on both sides until crispy and golden. Serve with fries and enjoy.
