Ingredients
for the chicken:
400gm boneless chicken thigh/breast
salt to taste
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp cumin powder
1 tsp ginger garlic paste OR 1 tsp crushed garlic 🧄
for the sauce:
5 tbsp butter 🧈
1 small yellow or red onion sliced 🧅
1 large tomato diced 🍅
1/4th cup cashews
salt to taste
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp cumin powder
1/4 th cup heavy cream
2 tbsp fresh parsley
for the garlic spread:
1/4 cup butter
2 garlic pods
1 tbsp olive oil
salt to taste
1/2 tsp black pepper
1 tsp oregano
3/4th tsp dried parsley
1 tsp red chilli flakes
final assembly:
mozzarella cheese 1 cup
method:
1. in a bowl, add chicken cut up into small cubes. add all the listed ingredients and mix well.
2. in a pan, heat up some oil and fry the chicken pieces until they’re light golden. remove and keep aside.
3. in the same pan, heat up 3 tbsp butter and 2 tbsp oil. add the onions, tomatoes and cashews and all the listed seasonings. mix well and cook until the onions and tomatoes are soft. then, let it cool down and grind into a smooth paste.
4. add heavy cream and fresh parsley. set this aside.
assembly:
1. use italian or flat ciabatta bread and cut into half as shown.
2. spread the garlic butter evenly
3. add the chicken pieces
4. then add mozzarella cheese and drizzle the sauce on top
5. bake at 400F for 12 minutes or until the cheese is fully melted. broil for 3 minutes on high while keeping an eye so it doesn’t burn and that’s it!! enjoy :)
