DF/GF/RSF Chocolate Chip Cookies 🍪

Ingredients:

1 egg

2/3 cup coconut sugar

1/2 cup room temperature coconut oil

2 cups + 2 tbsp almond flour

1/2 tsp baking soda

1/2 tsp salt

2 cups cacao chips (I used the brand Lilys)

Instructions:

Combine egg, sugar, and oil in a large mixing bowl

Stir in almond flour, baking soda, and salt

Fold in cacao chips and chill the dough for at least an hour in the fridge

Preheat the oven to 350°F

Remove from fridge and roll into balls on a baking sheet

Bake 10–12 minutes (they will firm up while cooling on the tray, so you want them to be soft coming out of the oven)
