Crust:
- 12 cookies, blended into a fine powder
- 50g unsalted melted butter
1. Crush the cookies in a food processor until it turns into a fine powder
2. Combine ten cookies and butter
3. Add the cookie mixture into a lined cupcake pan. 2 tbsp per liner. Press it down very firmly
Batter:
- 100g granulated sugar
- 15ml vanilla
- 250g full fat room temp cream cheese
- 250ml cold heavy cream
- 10 cookies, roughly crushed
1. In a bowl, beat the cream cheese, vanilla and sugar until smooth
2. Add the cold heavy cream and beat until stiff peaks
3. Roughly crush the cookies and fold them into the batter
4. Distribute the batter between 9 liners
5. Freeze for 6 hours until solid
To decorate:
1. Use black fondant for the face decor
2. Take the cheesecake out of the freezer a few minutes before serving so it can soften a bit
