Fudgy gooey Brookies 🍫
Chocolate chip cookie layer:
100g cubed softened butter
10ml vanilla
50g light brown sugar
70g granulated sugar
1 room temp egg
150g flour
1 tsp baking powder
60g chocolate chips + some more for the top
1.In a bowl, whisk the flour, baking powder and salt.
2. In a separate bowl, cream the butter, sugars, vanilla, until fluffy. Add the egg and whisk until combined.
3. Add the dry ingredients and the chocolate chips.
4. Mix with a spatula until just combined then cover with plastic film and refrigerate for 30 minutes.
Brownie layer:
2 eggs
10ml vanilla
100g light brown sugar sugar
100g granulated sugar
125g cubed unsalted butter
150g milk chocolate chips
25g unsweetened cocoa powder
100g all purpose flour
1/2 tsp salt
1. Preheat your oven to 350°F and line an 8x8" square pan.
2. In a bowl, whisk the flour, cocoa powder and salt.
3. In a separate bowl, whisk the eggs, sugars, and vanilla until doubled in size and pale in colour.
4. Add the melted cooled brown butter into the egg yolk mixture and whisk until combined.
5. Add the dry ingredients and fold until just combined. Don't overmix.
6. Pour half of the brownie batter into the lined pan. Spread it out evenly.
7. Add half of the cookie dough to the top.
8. Add the rest of the brownie batter and spread it out evenly.
9. Add the remainder of the cookie dough to the top and finish it off with chocolate chips
10. Bake for 35-40 mins
11. Allow to cool 30 mins before serving
