Hey everyone! So, I've officially kicked off my intermittent fasting journey, and you know what? Day 1 was a total win, largely thanks to this absolutely delicious and satisfying veggie spaghetti I whipped up for dinner. I gave it a solid 100/100, and I just had to share the recipe with you all, especially if you're looking for flavorful, filling meals during your eating window. This isn't just your average pasta; it's packed with goodness and keeps you feeling great.
Here's How I Made My 100/100 Veggie Spaghetti:
Ingredients:
1 cup whole wheat spaghetti (or your preferred pasta)
1 tbsp olive oil
1 medium onion, finely chopped
2-3 cloves garlic, minced
1/2 cup bell peppers (any color), diced
1 cup fresh spinach
1/2 cup mushrooms, sliced (optional, but adds great texture!)
1 can (14.5 oz) crushed tomatoes or your favorite pasta sauce
1/4 cup vegetable broth (or water)
Salt and black pepper to taste
A pinch of red pepper flakes (for a little kick!)
Fresh basil or parsley for garnish
Instructions:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain well and set aside.
Sauté Aromatics: While the pasta cooks, heat olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Stir in the minced garlic and bell peppers, cooking for another 2-3 minutes until fragrant.
Add Veggies & Sauce: If using, add the sliced mushrooms and cook until they start to brown. Then, stir in the fresh spinach. It will wilt down quickly. Pour in the crushed tomatoes or pasta sauce and vegetable broth. Season with salt, black pepper, and red pepper flakes.
Simmer & Combine: Bring the sauce to a gentle simmer and let it cook for about 10-15 minutes, allowing the flavors to meld. If the sauce gets too thick, add a little more broth or water.
Serve: Add the cooked spaghetti directly to the sauce and toss to combine, ensuring every strand is coated. Serve immediately, garnished with fresh basil or parsley.
This meal was so perfect for breaking my fast. It’s hearty, full of fiber from the whole wheat pasta and all the veggies like spinach, which helps keep you full and satisfied, preventing those post-fasting cravings. Plus, it's packed with vitamins and minerals, giving my body the nutrients it needs.
To complement my meal, I had a refreshing glass of peach juice and some sweet green grapes on the side. It felt like such a complete and wholesome dinner. I highly recommend adding fruit and a good drink to your fasting-break meals for extra hydration and natural sugars.
Tips for Making Intermittent Fasting Easier with Pasta:
Portion Control: Even with healthy pasta, keep an eye on portion sizes. One cup of cooked pasta is usually a good serving.
Load Up on Veggies: Don't be shy with adding more vegetables! Broccoli, zucchini, cherry tomatoes – they all work wonderfully and boost both nutrients and satiety.
Choose Whole Grains: Opt for whole wheat pasta or even lentil/chickpea pasta for extra fiber and protein, which are crucial for sustained energy during your eating window.
Hydration is Key: Remember to drink plenty of water throughout your fasting period and with your meals. My peach juice was a tasty addition, but water is always number one.
Listen to Your Body: Intermittent fasting is a personal journey. Adjust your eating window and meals to what feels best for you. I'm thinking of adding some lean protein like chicken or turkey to this recipe once my initial fasting period is over, but for now, this veggie version is a winner!
I hope you try this recipe and love it as much as I did. Let me know your favorite intermittent fasting meals!
