Basil Coconut Chicken Curry
Ft. basil from garden🫶 We’ve been having a solid basil harvest so I’ve been wanting to learn how to cook with the herb more. Here’s a recipe I stumbled upon for some chickpeas and made them into chicken instead.
chicken (thighs are pictured)
1 white onion
2 green onion
2 garlic cloves
2 potatoes (or as many as you want..adjust to size)
4-6 leaves of fresh basil
1 can of coconut milk
2 Tbsp lime juice
1-2 Tbsp curry powder
2 bay leaves (optional but yum)
complete seasoning to taste
This tastes like a warm hug. I’m really loving this whole “eat what you grow” thing. Even when it’s just a herb, there’s something that feels so special (and luxurious tbh!) when you’re the one who grew it.
