Buffalo Chicken Cucumber Rolls

1 large cucumber

- ½ cup cooked and shredded chicken

- 1/4 cup buffalo sauce

- 1/4 cup mayonnaise

- 1/4 cup diced celery

- 1/4 cup diced red onion

- Salt and pepper to taste

- Fresh chives and dill (for garnish)

Peel the cucumber and slice it lengthwise using a vegetable peeler or a mandoline slicer to create thin strips (6 or 7)

Pat the cucumber dry then lay flat. Spread mayonnaise then place diagonally the shredded chicken, buffalo sauce, celery, red onion add salt, and pepper.

Drizzle buffalo sauce over chopped veggies and chicken

Roll the cucumber strip tightly around the filling to create a roll.

Secure the roll with a toothpick if necessary. Cut it into 6 rolls.

Arrange the buffalo chicken cucumber rolls on a serving plate.
