Fried Cabbage with Bacon & Homemade Cornbread 🥓🤗
6 slices bacon chopped
1 cup onion chopped
3 cloves garlic minced
1 large head cabbage cored and chopped
2 teaspoons seasoned salt (I use Slap Ya Mama, or Tony’s)
1/2teaspoon ground black pepper
1/2teaspoon onion powder
1/2teaspoon garlic powder
INSTRUCTIONS
Cook the bacon in a jumbo cooker over medium-high heat until crisp. (I like my magnilite pot or a large cast iron pot) remove the bacon to a paper towel-lined plate. Reserve 2 tablespoons of the bacon grease and save the rest for your bacon grease jar (never throw away bacon grease 😉)
In the same jumbo cooker, return the 2 tablespoons bacon grease. Over medium-high heat, cook the onion until it is soft, about 4 minutes. Add the garlic and continue to cook for an additional 1 minute. Stir in the cabbage and continue to cook and stir for 4-5 minutes. Add the seasoned salt, pepper, onion powder and garlic powder. Mix well.
Reduce heat to low, cover, and allow to simmer, stirring occasionally, for about 30 minutes. (I prefer mine to still be somewhat crunchy over it being mushy)
Just before serving, mix the bacon into the cooked cabbage. (This can also be cooked with smoked sausage in replacement of bacon) Serve immediately with homemade cornbread (I’ll attach my homemade recipe for that below…
Amy’s Cornbread
2 cups flour
2 cups corn meal
2 cups milk
3 teaspoons baking powder
2 eggs
1/3 cup vegetable oil
1/2 teaspoons salt
Spead bacon grease in a cast iron skillet
Preheat oven to 425
Put skillet in oven while preparing the batter
Once all mixed add batter to hot skillet
