Chicken & Tofu Caprese (2/2)
It's like a bite size chicken nugget pizza 🤣
These are pretty quick, easy, and tasty. You don't have to pound the chicken flat with a beer can, but it helps, not the beer can part but the flat meat part 😂 the tofu version is the same as the chicken minus the beating of the meat 😅
Once everything is cut...flour, egg, bread, egg, bread, and rack to dry while heating up the oil, then fry until crispy.
Slice a tomato, crack some pepper, then place on top w/ a slice of fresh mozzarella and broil to melt.
While the cheese melts, crisp up some bacon and garlic slices for toppings, add some fresh basil, and enjoy!
I was going to make a honey balsamic drizzle but I found out too late I was out of balsamic vinegar 🤣
If you're looking for a fun and flavorful snack that's both satisfying and easy to make, these Chicken & Tofu Caprese bites are a fantastic choice. From personal experience, the key to making them irresistibly crispy is to ensure your tofu or chicken slices are pounded flat before breading; this helps them cook evenly and achieve that perfect crunch. I usually coat each piece with a flour, egg, and breadcrumb mixture twice (egg then bread, egg then bread again) which makes a thicker, crunchier layer that holds up well to frying. For the tofu version, since you don't need to flatten it, you can save some prep time but still get that lovely texture and flavor. When it comes to toppings, freshly sliced tomatoes and mozzarella cheese are essentials, but what really elevates the dish is broiling just enough to melt the cheese to gooey perfection without drying out the tomato. Adding fresh basil leaves right after broiling adds a burst of herbal freshness that balances the richness. Crisping up bacon and garlic slices while the cheese melts adds an aromatic and savory dimension that complements both chicken and tofu. If you want to add a touch of sweetness or acidity, a drizzle of honey balsamic glaze works wonders, but if you happen to run out like I did, a squeeze of fresh lemon or a little maple syrup can be a quick alternative. I recommend serving these bites warm, right out of the pan, paired with your favorite dipping sauces such as a garlic aioli or spicy marinara for an extra flavor kick. They’re great for casual gatherings, quick lunches, or even a delicious appetizer for dinner parties. Plus, this recipe’s versatility means you can easily adjust ingredients to suit dietary preferences—swap mozzarella for vegan cheese, or skip bacon for a vegetarian-friendly version. Overall, these Chicken & Tofu Caprese bites offer a fun twist on traditional Caprese salad and classic chicken nuggets, merging textures and flavors that make them an irresistible treat.
