The bread that the respected customer ordered from before the new year. "Nong ^ _ ^.. I want to eat matcha bread. Nong ^ _ ^ Make me. I want to keep it for the New Year's long holidays..."

Since the day the customer ordered (We broke it 2 times!)

But every time we break down, we always learn from that failure. "Experience is the best teacher."

Although getting caught up in weekly failure (skipping the New Year) wasn't fun, at that time we took a break, forgot our mistakes, found the equation of failure, and tried to fix it.

We already know that the destination is a success. "We have to do it..." (here it is... taste, texture, fit, whatever we want it to be). Because as long as we try, even if the steps are slight, stop, discouraged, but we know for sure... that it is always moving towards the destination we try.

And success (in the middle of the way, full of discouragement, depression, insecurity, all negative things), but today, enough to do, it smells so sweet.

It was once said that... to flag success to the little things that come through life, it will be a great force to support on days when we are tired and invisible to our destination, or on days when we miss, always crawl.

Because on the day of our tiredness... when we look back, we see a small flag of step that we pin on our hands, and it will make us realize, "How far have we moved..." It will be a force of mind and a compass that will not easily stray from the path we choose...

ถ้าใครเสิร์ชหา “matcha shokupan” แล้วอยากทำให้ได้เนื้อโชกุปังนุ่มๆ หอมมัทฉะแบบไม่ขมโดด เราขอแชร์สิ่งที่เราเจอจากการลองผิดลองถูก (พังแล้วพังอีก) จนเริ่มจับทางได้ค่ะ บางทีสูตรอาจคล้ายกัน แต่รายละเอียดเล็กๆ นี่แหละที่ทำให้ปังหรือพัง 1) เลือกมัทฉะให้เหมาะกับขนมปัง มัทฉะมีหลายเกรด ถ้าใช้แบบเข้มมากหรือกลิ่นแรงเกิน อาจออกขม/ฝาดเมื่ออบ แนะนำเริ่มจากมัทฉะที่ทำลาเต้/ทำขนมโดยเฉพาะก่อน พอคุมรสได้แล้วค่อยไต่ระดับความเข้ม ที่สำคัญคือ “ร่อนผงมัทฉะ” ก่อนผสม จะช่วยลดเป็นเม็ดเขียวๆ ในเนื้อขนมปัง ทำให้สีสวยและเนียนขึ้น 2) คุมความชื้น = หัวใจของ Shokupan โชกุปังที่นุ่มฉ่ำมักมาจากโดว์ที่ชุ่มพอดี แต่ถ้าเติมน้ำ/นมทีเดียวเยอะไป โดว์จะเหลว นวดไม่ขึ้นและขึ้นรูปยาก วิธีที่ช่วยเราได้คือ “กันของเหลวไว้ก่อนเล็กน้อย” แล้วค่อยๆ เติมตอนนวดจนโดว์เริ่มรวมตัวดี ความชื้นของแป้งแต่ละวันไม่เท่ากัน การค่อยๆ เติมทำให้คุมง่ายกว่า 3) ระวังโดว์ร้อนตอนนวด (ทำให้พังแบบไม่รู้ตัว) มัทฉะทำให้เราเผลอนวดนานเพราะอยากให้เนียน แต่ถ้าโดว์อุณหภูมิสูง ไขมันละลาย โครงสร้างกลูเตนอ่อน ขึ้นฟูยากและเนื้อจะแน่น วิธีแก้คือพักโดว์เป็นช่วงๆ หรือแช่โถ/ของเหลวให้เย็นก่อนเริ่มนวด เป้าหมายคือโดว์เนียน ยืดได้ ไม่ขาดง่าย (แต่ไม่ต้องถึงกับนวดจนร้อนจัด) 4) เช็กการขึ้นฟูด้วย “สภาพโดว์” ไม่ใช่แค่เวลา หลายครั้งเราพังเพราะยึดเวลาตามสูตรเป๊ะๆ ทั้งที่อากาศวันนั้นร้อน/เย็นต่างกัน แนะนำดูโดว์เป็นหลัก เช่น ขึ้นฟูประมาณ 2 เท่า ผิวตึงนุ่ม กดแล้วรอยบุ๋มเด้งกลับช้าๆ ถ้าฟูเกินไป (overproof) อบแล้วมักยุบหรือเนื้อเป็นโพรงได้ 5) สีและกลิ่นมัทฉะหลังอบให้สวย มัทฉะไวต่อความร้อน สีจะหม่นได้ง่าย เทคนิคเล็กๆ คือผสมมัทฉะกับแป้งให้กระจายก่อน แล้วค่อยเติมของเหลว และพยายามไม่อบนานเกินจำเป็น ถ้าหน้าขนมปังเริ่มเข้มเร็ว สามารถคลุมฟอยล์ช่วงท้ายเพื่อลดการไหม้และรักษากลิ่นหอม 6) เก็บให้ยังนุ่มเหมือนวันแรก Matcha Shokupan อร่อยสุดตอนนุ่มๆ ถ้ากินไม่หมด แนะนำรอให้เย็นสนิทก่อนใส่ถุงปิดสนิท เพื่อลดการสูญเสียความชื้น ถ้าจะแช่แข็งให้หั่นเป็นแผ่นๆ จะหยิบปิ้งง่าย กลิ่นมัทฉะยังอยู่ดี สุดท้ายอยากบอกว่า ขนมปังมัทฉะโชกุปังเป็นงานที่ต้อง “ปรับตามหน้างาน” มากกว่าสูตรบนกระดาษ พังได้ไม่แปลก แต่ทุกครั้งที่จดว่าพลาดตรงไหน (โดว์แฉะไป? นวดร้อนไป? proof นานไป?) รอบถัดไปจะปังขึ้นจริงๆ ใครกำลังทำ Matcha Shokupan อยู่ ลองโฟกัส 3 เรื่องนี้ก่อน: ความชื้นโดว์ + อุณหภูมิโดว์ + การขึ้นฟู แล้วผลลัพธ์จะต่างชัดเลยค่ะ
