* 1 stick unsalted butter, softened

* 1 large egg
* 1/4 cup 7UP
* Splash of lemon extract
Dry
* 2 3/4 cups all purpose flour
* 1-3oz box lemon instant pudding mix
* 1/2 tsp baking powder
* 1/2 tsp salt
Lemon Glaze
* 1 1/3 cups powdered sugar
* 2 tbsp milk
* Fresh lemon juice, from lemon used for zest (about 1 tbsp)
Bake Temperature: 350F
Bake Time: 12-13 minutes
Yields: 15-16 cookies
1. Preheat oven to 350F.
2. To a bowl add your flour, instant pudding mix, baking powder, and salt. Mix and set aside.
3. In another bowl, add your white sugar.
4. Take your lemon zest and add to sugar. Coat sugar with your lemon zest by rubbing together with your fingers.
