Pot Roast

I swear this roast feeds your soul. The pepperoncini takes it there. Save this for a weeknight you need a win.

Ingredients:

- 3–4 lb beef chuck roast

- ½ stick (4 tbsp) unsalted butter

- 1 large onion, chopped

- 3 cups carrots, sliced

- 1 (16 oz) jar pepperoncini peppers (with juice)

- 1 packet beef stew seasoning

- 1 packet au jus gravy mix

- 1 packet ranch seasoning mix

- 1 (15 oz) can tomato sauce

- ½ can water (use tomato sauce can to measure)

Instructions

1. Sear roast & remove.

2. In same pot, melt butter.

3. Add onion + carrots, sauté 1–2 min.

4. Pour in pepperoncinis (juice too).

5. Add all 3 seasonings.

6. Stir in tomato sauce + water.

7. Simmer 5 min.

8. Place roast in crockpot.

9. Pour gravy over roast.

10. Cook on low 10 hrs or high 8 hrs.

11. Shred & serve with rice or mashed potatoes.
