Instant pot- Pot Roast!

Ingredients: (may vary based of size of roast )

- *beef chuck roast** (or similar cut)

- *olive oil**

- **1 medium onion**, chopped

- **3-4 cloves garlic**, minced

- *carrots**, peeled and cut into chunks

- *potatoes and celery

- **2.5 cups beef broth** (or stock)

- **2 tablespoons Worcestershire sauce** (W sauce)

- **Salt and pepper**, to taste

Instructions:

1. **Sear the Roast**:

- Set your Instant Pot to the "Sauté" mode and heat the olive oil.

- Season the roast generously on all sides .

- Once the oil is hot, carefully add the roast to the pot. Sear it for about 3-5 minutes on each side until browned. Remove the roast and set it aside.

2. **Sauté Vegetables**:

- In the same pot, add the chopped onion and sauté for about 2-3 minutes until softened.

- Add minced garlic and sauté for an additional minute until fragrant.

3. **Deglaze the Pot**:

- Pour in half a cup of beef broth, scraping the bottom of the pot with a wooden spoon to deglaze it. This will help release any flavorful bits stuck to the bottom.

4. **Add Remaining Ingredients**:

- Return the roast to the pot. Add the remaining beef broth, Worcestershire sauce, carrots, celery, and potatoes around the roast.

5. **Cook Under Pressure**:

- Close the Instant Pot lid securely and ensure the steam valve is set to "Sealing."

- Select the "Manual" or "Pressure Cook" setting and set the timer for 60 minutes on high pressure.

6. **Natural Release**:

- Once the cooking time is complete, allow the Instant Pot to naturally release the pressure for about 15-20 minutes.

- After that, you can carefully switch the steam valve to "Venting" to release any remaining pressure.

7. **Serve**:

- Carefully shred roast in pot and serve over potatoes/ rice/ empty bowl!

- You can strain the cooking liquid if desired and serve it as gravy!

Tips:

- Feel free to add other vegetables!

- Adjust the seasonings according to your taste.

- Leftovers can be stored in the fridge for a few days and make great sandwiches or leftovers.
