It just means it's the perfect excuse for a delicious late breakfast, which often turns into a fantastic brunch! It feels like such a treat, without the rush of a typical weekday morning. My absolute favorite late breakfast spread, the one that makes waking up late feel like a reward, usually involves a mix of savory and sweet. Just like the one in my picture, I love piling my plate high with fluffy pancakes. For me, the trick to truly fluffy pancakes is not to overmix the batter – a few lumps are totally fine! I also like to add a splash of vanilla extract for extra flavor. And who can resist crispy bacon strips? I usually bake my bacon in the oven; it cooks evenly, gets perfectly crispy, and saves me from greasy splatters on the stovetop. It’s a game-changer! Of course, no late breakfast or brunch plate is complete without eggs. My go-to is always fluffy scrambled eggs. The secret I've learned is to cook them low and slow, stirring gently, and taking them off the heat just before they're fully set, as they'll continue to cook from residual heat. A little pat of butter and a pinch of salt and pepper are all you need. And for that extra indulgence, especially when I'm feeling fancy, those iced cinnamon rolls are a must! Sometimes I'll grab some from the bakery, or if I'm feeling ambitious, a quick homemade batch made with store-bought dough can be surprisingly easy and delicious. It really makes the meal feel special. If you're looking for more late breakfast ideas, there are so many fun directions you can go! On the savory side, I adore a good avocado toast topped with a perfectly poached egg and a sprinkle of chili flakes. Breakfast burritos or tacos are also fantastic because you can use up any leftovers you have in the fridge – think roasted veggies, black beans, or leftover chicken. Frittatas or mini quiches are brilliant for feeding a crowd or for meal prepping, as you can bake them ahead of time and reheat. For those with a sweet tooth, beyond pancakes and cinnamon rolls, French toast is always a winner. You can get creative with toppings like fresh berries, whipped cream, or a drizzle of maple syrup.
