Vietnamese sizzling pancake
My husband loves banh xeo (Vietnamese sizzling pancake) so much that he wanted to learn how to make it himself. There are so many ways to make it in Vietnam from North to South, every region does it differently , and there is really no right or wrong way. I like mine soft and creamy, while he likes his thin and extra crispy.
Batter:
1 bag rice flour 1 lb
Cornstarch 3 tbsp
Savoy Coconut Cream 1/2 cup ( optional)
Cold water 5.5 cups
1 tsp salt
1 tsp turmeric powder
finely chopped green onion
Combine everything and allow the batter to rest for at least an hour.
Filling:
You can use pretty much anything you like for the filling. Some options are bean sprouts, steamed mung beans, pork belly, duck, bamboo shoots, shrimp, squid, and onions.
Sweet and sour fish sauce :
•4 tbsp fish sauce
•3-4 tbsp of cane sugar
•2 tbsp of fresh lime juice
•8 tbsp of cold water
•Minced garlic and red chili
Im using carbon steel pan btw. Safe for metal utensils
Banh xeo is truly a versatile and beloved dish throughout Vietnam, with each region adding its own unique twist based on local ingredients and preferences. When I started making banh xeo at home, I found it's important to master the batter consistency to suit your taste—whether you prefer it thin and crispy like the southern style or thicker and creamier as commonly found in central regions. Using rice flour with a mix of cornstarch really helps achieve that delicate crispness, while coconut cream adds a subtle richness. One tip I've learned is to let the batter rest for at least an hour; this helps the starches hydrate fully, resulting in a better texture. Also, I recommend experimenting with fillings according to what's fresh and seasonal. Shrimp and pork belly are classic choices, but incorporating bamboo shoots or mung beans can add delightful textures and flavors. The dipping sauce is just as crucial as the pancake itself. Balancing fish sauce with fresh lime juice, sugar, and chili gives a perfect mix of salty, sweet, sour, and spicy notes that awaken your palate. Preparing this sauce in advance allows the flavors to meld beautifully. For cooking tools, using a carbon steel pan—as mentioned—is a great choice because it heats evenly and creates that coveted sizzling sound and crispy edges. Unlike non-stick pans, this style also allows for using metal utensils without damage. Overall, making banh xeo at home is a rewarding experience that lets you customize every element to your liking. The process encourages creativity and exploration of Vietnamese culinary traditions, making it a fun project to do with family or friends. Once you get the hang of it, it becomes a delightful dish to serve for gatherings or a cozy weekend meal.
