It's so simple, you'll wonder why you didn't think of it sooner. Here's my absolute favorite and easiest way to peel limes: First, roll your lime firmly on a countertop for about 10-15 seconds. This helps release the juices and makes the skin slightly more pliable. Next, and this is the magic part, pop your lime into the microwave for about 10-15 seconds, or immerse it in hot water for a minute. Be careful, it might be warm! This softens the peel beautifully. Once it's warm, simply take a sharp paring knife and very carefully score the lime from end to end, making 4-6 vertical cuts, but don't cut too deep into the flesh. Then, you can easily pry off the peel segments with your fingers or the knife tip. It comes off like a dream, often in large, clean strips, leaving you with perfectly peeled limes ready for anything! Of course, there are other ways to peel a lime. Some people prefer using a vegetable peeler, which can work well for thin zest but might take off too much pith if you're not careful.
