Chicken Salad Sandwich | Meal Prep Recipe
Ingredients
• chicken breasts, boiled & shredded (I used two)
• celery
• sweetener (sugar or honey)
• mayonnaise
• sour cream
• lemon juice
• dill weed
• dill relish
• salt and pepper
• mustard (I used Dijon)
Directions:
1. Prep chicken. I boiled mine for a softer texture. Shred after cooked.
2. In a bowl, add equal parts mayonnaise and sour cream. Add 2 tsp sweetener, lemon juice, dill relish, and mustard. Add a generous amount of dill weed. Add a tbsp of lemon juice. Add a dash of salt and pepper. Stir and taste. Adjust to your liking.
3. Add thinly sliced celery to the mixture and shredded chicken. Stir.
4. Refrigerate in a sealed container. When ready to eat, serve on a croissant or with crackers. I meal prepped the sandwiches the night before I’d eat them. If you prep too far ahead, the croissant may be soggy.
